Aate Ki Panjiri Recipe

Remember those earlier days, as soon as winter comes, mother used to make healthy and full of nutrients homemade Panjiri. It is a Pakistani and Indian seasonal staple from the Punjab region treated as a nutritional supplement. It is made from whole-wheat flour fried in sugar and ghee, heavily laced with dried fruits and herbal gums. Today we are going to share Aate Ki Panjiri Recipe.

Ingredients for Aate Ki Panjiri Recipe:

  • 1 cup whole wheat flour/atta
  • 1/2 cup powdered sugar
  • 1/2 cup desi ghee/clarified butter
  • A pinch cardamom powder
  • Almonds to Garnish


  • Take ghee in a kadai or a thick bottomed broad pan and heat it for 2 mins.
  • Now add whole wheat flour (atta) and keep the pan on a low flame or sim and begin to roast it.
  • Keep on stirring while roasting the flour so that there is even roasting.
  • Roast till the colour changes and you get nutty aroma from the whole wheat flour i.e. for about 10-15 minutes on a low flame.
  • Add cardamom powder and cook for another 2 mins and turn off the flame.
  • Now add powdered sugar and mix very well.
  • Allow the panjiri to cool. and then serve.


  • You can add dry roast nuts in panjiri but traditional panjiri is always made without nuts and trust me its hell tasty.
  • If you like crunch of sugar, you can use normal sugar as well instead of powdered sugar.
